The Mr. and I make homemade pizzas on a routine basis. I am not a fan of the greasy and healthy delivery options! Here is one of my new favorites, the BBQ chicken pizza. I know it has been around for a long time but I have always loved California Pizza Kitchen's version...so we decided to make one of our own and it was delicious!
Ingredients:
1 Pizza Crust (store bough or homemade)
2 whole Boneless, Skinless Chicken Breasts
1/2 cup Barbecue Sauce
Olive Oil, for drizzling
Salt for Sprinkling
16 oz of Fresh Mozzarella Cheese (Sliced Thinly)
1/2 whole Red Onion, Cut In Half And Sliced Very Thin
Chopped Cilantro, to taste
Directions:
-Preheat over to 375 degrees.
-Salt chicken breasts on both sides, then place in an overproof dish. Pour BBQ sauce over the breasts and turn them over to coat.
-Bake for 20-25 minutes, or until chicken is done. Remove from oven and cut into small pieces. Set aside.
-Increase over temperature to 400 degrees.
-Roll/Stretch out one pizza crust. Lay it on a sheet pan drizzles with olive oil. Drizzle a little olive oil on the crust as well, then sprinkle on a little salt.
-Spoon a couple of tablespoons of extra BBQ sauce on the crust and spread it evenly. Top sauce with the thinly sliced mozzarella.
-Sprinkle on half of the diced chicken and sliced red onion then sprinkle again with a little salt.
-Bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly. Remove from the oven and sprinkle on plenty of chopped cilantro. Cut into squares and serve immediately.
